I been kinda busy


Ok...so yeah - its been over a month since my last post.

Dont think that I have not been cooking, because I have. Just too busy to write.
My parents were just here for a visit and my mom brought me her old food processor. For Hanukkah, we made potato pancakes - not from a box...

6 potatoes
4 eggs
flour or bread crumbs
salt. pepper and garlic
2 onions

"food process" the potatoes and onions. mix in the eggs and the spices and the bread crumbs/flour. The flour/bread crumbs are just to hold everything together.

Set the heat to a little higher than medium, pour in some cooking oil. spoon in little amounts and mash flat (the thinner the better, crisper too)

Best enjoyed with sour cream, apple sauce or some jam.

My future posts are going to switch gears and be healthier options.

Saturday Morning in Cornwall


Morning everyone,
Today is an easy one and I even have a picture...YAY.
I made pumpkin pancakes.

Recipe:
flour (or bisquick) about 2 cups
2 eggs
1.5 cups of milk (whatever kind u like)
half a can of pumpkin
vanilla
clove
cinnamon

Mix it all together. Make sure you turn on the griddle before you start mixing so that you can scoop the batter into hot butter.

makes about 16 nice size pancakes...

Enjoy if you try it...you know we had bacon with ours...

All quiet in the MV (in the kitchen)

Hey Everyone!

Its been a busy week - not much cooking. I think I am going to make up for this week starting next week as we begin to prepare for Thanksgiving.

We started out Monday at a dinner party after work at my friend Chris Lawrence. O M G...we had thin sliced blackened pork chops, home made mac n cheese and buttery carrots and a salad. #1 it was all F-A-B-U-L-O-U-S! #2 - no dishes to clean that night...best of all good company. Desert was off the hook with yummy bread pudding that was finally finished Wednesday at lunch...

I think someone else made me dinner Tuesday...whats his name? Starts with a P...hmmmm

He is such a good cook too. He made these amazing chicken burritos for us that night. Again, no dishes for me that night...weird...
While he was in the kitchen he made some chicken cutlets for us to bring to lunch. In my defense to not doing dishes, I make sandwiches for us in the morning to take with us for lunch later that day...so its a trade...ha ha

Wednesday and Thursday we found ourselves at Metropolitan Bar (Thursday was their birthday) so we had to go two days in a row. When we drink at Metro we dine at Carmines...
Thats just how it is...so you know we had pizza after!

Wakey Wakey - French Toast and Bakey

Good morning folks...
Its Saturday am and all is good again upstate. You know I start the coffee before I cook anything.

My little helper was with me in the kitchen this morning. He loves to beat the eggs and in general help out except for cleaning.

On today's breakfast menu is French Toast and Bacon. The kids skip the bacon because they are vegetarian. I used to be but that is a story for another blog.

OK, so we are starting out with a whole challah, sliced thick. Put the griddle on the heat now, so its nice and hot by the time you are ready to set the french toast in it.
Beat (4) eggs and add in clove, cinnamon, vanilla extract. Whip it real good...
then add milk and stir some more.

place several slices of butter in the griddle. Start dipping the challah in the mixture and straight to the pan. You will need to flip several times until you achieve your desired look. I like a nice golden brown.

Serve immediately...The kids like agave syrup on theirs. Peter likes sugar sprinkled on his. I like Jam on mine...You decide what you like on yours!

While the kids are eating, I cook up the bacon. When the bacon is done, the grown ups get to eat.

I would have taken pictures but its all gone already.

Last night...

So last night was Taste of T...


It was a lot of fun - I didn't have to cook, but there was lots to sample and of course drink.
Short break down:

Wine: not so good, but drinkable

Brooklyn Brewery - I like their beer -but didn't like what they served...

#1 passed food - braised short rib quesadillas
#2 passed food - coconut shrimp

Favorite stop - Eggersmann - Lobster Bisque
2nd favorite - Artistic Tile - Mini Brownies (Blue Sky Bakery)
3rd favorite - Studium - Donuts filled with some sort of cream - mad good.

I am just getting started - so my next post I promise to have some pictures.

Have a great weekend! Looking forward to sharing this weekends good eats next week (although I got jury duty Monday...)

Its Wednesday night in the MV

Last night was a cooking frenzy in the MV (thas Middle Village...)
I am on a Brussels sprout kick...so last night I fried up some bacon, and dropped the Brussels sprouts into the bacon grease to get crispy (YUM) and then poured in some Guinness...(not my favorite beer, but did it for the experience) OK - so after I got the sprouts all crispy, I throw em in the oven mixed with the bacon at 400. 20 minutes later, mix in some butter and hot sauce - A M A Z I N G.

They were consumed with Grilled Chicken and a nice salad...Hope you enjoy if you try it.

So after the sprouts, I still wasn't done...I made a big ole batch of chicken soup...It will last for days. Potatoes, onions, spinach, TRADER JOES 21 spice salute (I <3>
I start by making my own chicken broth...spices and such. Don't measure! eye it til it looks good.
Let that stuff boil for a while...then simmer...

I made a soup similar to this one the other day - threw in shredded pork chops and meatballs. How can it be bad? You veggies out there can throw in veggie meatballs if you like or some other soy product...

Perfect for a cold evening with a blanket and a movie...and don't forget the LARD BREAD...
That goes good with EVERYTHING. Go to Emily's Pork Shop on Graham (the "H" is silent) in Williamsburg on any Saturday after 11:30am....the bread is mad good.
