Chili on Saturday


Hey everyone.  It has been a cold day upstate so I decided to make a pot of chili to warm up!
Its a real simple and low calorie recipe.  You will need the following items:
(1) LB of 95% Ground Sirloin
(1) Onion (red or white)
(4) Tomatos
(10) TBSP of Salsa (with no sugar)
Garlic
Parsley
Bay Leaves
Sea Salt
Pepper
Chili Powder
Paprika
3/4 cup water

First brown the meat.  Add the spices listed above with the meat except the bay leaves.  You can never have too much flavor, so eye in the spices.  Once the meat is cooked, add chopped onion and chopped tomatos.  Increase the heat to Hi so that the tomatos almost get mushy.  Stir often.  After a few minutes lower the heat to Lo.  Add the water, salsa and two bay leaves.
Let it sit and cook all day.

Enjoy with cheddar cheese or plain.  You can also add black beans or kidney beans.  I am watching my caloric intake, so skipping the beans for now.
Half of this pot of chili is 554 calories.  Its a pretty big serving.

Good Morning - Happy Friday



Hey Folks, I know its been a while - but I have not been cooking anything too interesting lately. Been on a low calorie diet and the food has been very simple. I am now done and back to a "regular" diet. I will consume approximately 1500 calories a day now.

Its a lot of work to count calories but it is manageable. Remember you are worth the effort it takes to maintain your healthy existence!

A little tip when shopping: READ YOUR LABELS! You will be so surprised to see how many items that sugar is listed as an ingredient. Another little secret is that when you look at the labels, look for items that have less than 8-10 items listed in them. Also, if you cant pronounce the items listed on the label, dont buy it!

So for this morning's breakfast I made an egg scramble with no oil. You really dont need it if you have non stick pans anyway and its just a waste of calories otherwise...save the calories for when they really count!

For this recipe you will need the following:
(2) eggs
(3) mushrooms
1/4 cup onions chopped (I buy them from the freezer section already chopped)
1/2 cup of frozen chopped spinach
(2) tbsp of salsa
(1)oz of herbed goat cheese

Wash and chop the mushrooms. Mix the frozen veggies, mushrooms and about 1/4 cup of water in a non stick pan. When veggies are getting soft, add the eggs (its helpful to scramble the eggs while cooking the veggies)
Once the egg mixture is cooked, plate them and sprinkle the salsa and crumble the cheese over them.

Enjoy with a nice tall ice coffee with stevia drops and/or skim milk.
