Sunday Morning in Cornwall, New York

Yesterday we went on a five mile hike...today we rest (and cook)
Got an email from www.Sparkpeople.com and it contained a recipe that I liked and so I am bringing it to you with some tweaks.

You will need:
(6) large eggs
(1) cup shredded cheddar
(3) scallions
5 oz mushrooms (sliced)
(1) package frozen spinach

Cook the spinach first.  While the spinach is cooking, wash and cut up the scallions and mushrooms.  When the spinach is done cooking, add the mushrooms and scallions.  Mix in the 6 eggs.   Stir mixture.  Add the cheese last and mix some more.

Spray a muffin tin with Pam or Olive Oil Spray.   Pour into the muffin tin.
Bake for 20 minutes at 350 degrees.

Salad thats a meal...and a movie


What you will need:
Dressing:
(2) pieces of cooked bacon (no sugar or brown sugar)
(1) tbsp of mayonaise (no sugar)
(3) tbsp of salsa (no sugar)
Salad:
1/2 cucumber, peeled and sliced
(1) cup of cherry tomatoes
(5) large celery stalks - cut in to tiny pieces
(1) 5-6oz piece of grilled or boiled chicken breast
6-8 leaves of Romaine lettuce

break up the (2) strips of bacon into little tiny pieces.  Add (3) tbsp of salsa and (1) tbsp of mayonaise.  Mix together.

Wash and slice all the veggies listed above.  Spread the lettuce on a plate.  Mix the sliced veggies with the dressing in a separate bowl.  Pour on top of lettuce.  Place sliced chicken breast on top of veggie/dressing mix.
