
Happy New Year folks - today's entry is dedicated to "Nancy", P-hays gluten allergic co-worker...
I told you guys I would be working on healthier recipes. I wouldn't go on a diet of just these, but they are better for you than the full on brownie!
Here are the ingredients:
(1) can chickpeas, drained
1 1/2 cups of darkest chocolate chips you like
1 1/2 cups of agave syrup
(4) eggs
(1) Tsp of vanilla
(1) Tsp of baking powder
1/2 cup of chopped walnuts
if making in a 9x13 pan, use pam or similar to spray the pan. Otherwise, use a muffin pan and insert the paper cups.
Pre-heat the oven to 350.
Mix the chickpeas in blender til smooth. Add eggs. Add vanilla. Add baking powder. Add agave.
Warm the chocolate chips in microwave or on the stove top. Add into blender with chickpeas and eggs. Make sure the ingredients are blended well.
Pour into muffin pan or 9x13 pan. Sprinkle chopped walnuts on top.
Bake in oven at 350 for 45 minutes. Check with a knife and if it comes out clean you are done. Depending on your location, elevation or your oven you may need 5 more minutes.
When cooled sprinkle powdered sugar on top.
